Barton’s Thomas S. Moore Extended Cask Finish is a new line extension focused on experimentation and honoring the man who built the Barton 1792 distillery. Moore found the Belle of Nelson (whiskey brand, not to be confused with Belle Meade). He also built Bardstown’s original cathedral along with Thomas S. Moore Distillery in 1889. As with many distilleries founded in the mid- to late 19th century, it failed to survive Prohibition.

Barton is now using Thomas S. Moore line extension to celebrate Moore’s creativity in whiskey making with extended cask finishes. What makes these finishes stand out is the time the bourbon will spend in the finishing barrel.  According to Barton master distiller Danny Kahn, these bourbons were aged for five to seven years then dozed in the second barrel for two to five years. Plus Barton has other finishes already resting in second barrels — like cognac, sherry, and tawny port. Thomas S. Moore will be released every fall.

One final note, Barton upped the ante with the bottle design. It screams high quality harkening back to a premium Cognac from the Old World.

Nose – 93 out of 100 Points

The nose is rich. All flavors are reduced and amplified. Dark red fruits reduced into a compote is the primary aroma. Think cherries, dried cranberries, red grapes, and plums. Burnt caramel and heavily charred, sugary oak. Just a hint of sweet charred cinnamon and other baking spices.

Taste – 90 out of 100 Points

The front palate highlights all those red fruits but they’re more stewed and less sugary. It also has nice oaky and peppery notes to round out those fruit notes. The mouthfeel is solid. It’s a drier palate.

Finish – 90 out of 100 Points

The finish is long and tannic. The port notes shine through followed by a deluge of oak and charred cinnamon with just a hint of butter grape skins.

Complexity – 90 out of 100 Points

The nose offered great depth and complexity. It was an orchestra of exciting aromas. The palate and finish while delicious lacked the depth and complexity of the nose. They were a straightforward rendition of the port finish.

Value – 89 out of 100 Points

The Thomas S. Moore Port Finish retails for $70. I’d say a fair price for the drinking experience.

Nose – 92 out of 100 Points

The aromas are bright and crisp. It reminds me of hard cider made with apples and rock fruit. I also pick up some charred oak and subtle baking spice. These savory notes add nice depth to the crisp fruit notes on the front.

Taste – 88 out of 100 Points

The mouthfeel is great, but it’s more of a dry pear cider on the palate. I’m also picking cedar and juniper berries and a tingly red peppercorn. It’s a woodsy palate.

Finish – 87 out of 100 Points

It’s a long finish with more of the woodsy notes from the palate and just hints of those rock fruit.

Complexity – 91 out of 100 Points

The flavor profile is unique. I’ve never experienced a whiskey like this. It’s nothing like what I would’ve expected from a Chardonnay finish. Those woodsy flavors add a nice complexity.

Value – 90 out of 100 Points

The Thomas S. Moore Chardonnay extended cask finish has even more value because of the flavor profile. As the Bard says, “Have more than thou showest.” If you’re an adventurous drinker, this whiskey has more than it shows.

Nose – 94 out of 100 Points

The aromas are full-on dark chocolate and Cabernet Sauvignon grapes melded together in a sauce you might pour over a delicious ribeye steak. There are also some toasty oak and tobacco notes. Returning I’m getting just a pop of dark, fresh cherry. Also, after swirling the glass a bit while nosing, my Glencairn is draped in ribbons of whiskey. This whiskey is one you can continue to return to and pick out layers of flavor.

Taste – 90 out of 100 Points

My first thought is refreshing. The red wine note is prominent on the palate in addition to a dry mouthfeel. I feel like I should be drinking this with a fatty dry-aged steak. The mid-palate offers some sweetness followed by more toasted oak and white pepper.

Finish – 89 out of 100 Points

The finish is medium and tannic. The oak is pronounced and there’s a fresh vegetal quality.

Complexity – 90 out of 100 Points

The Cabernet Sauvignon followed suit where the most complexity was upfront then tapered towards the end of the drinking experience.

Value – 90 out of 100 Points

I’d say well worth the $70 because of the interesting flavor profile.
