Mellow Corn Bottled in Bond is, well, a mellow drinker aged in used Heaven Hill whiskey barrels to 100 proof. It’s the oldest corn whiskey on the market and the best corn whiskey available. Is Mellow Corn bourbon? No corn whiskey isn’t the same as bourbon. Bourbon requires 51% corn in the mash bill. Corn whiskey requires more than 79% corn in the mash bill.

Nose – 81 out of 100 Points
On the nose, Mellow Corn is well corny. I pick up cornbread with off-season corn and a pinch of brown sugar. There are some slightly acrid notes — like the cornbread was left just 2 to 3 minutes too long in the cast iron and burned a bit.
Taste – 83 out of 100 Points
The tip of the tongue is black pepper and flakes of bitter cornbread. It’s buttery creamed corn made with frozen kernels. The mid and back palate is youthful corn and oak. It’s a straightforward flavor profile.
Finish – 81 out of 100 Points
It’s a medium finish with, you guessed it, more corn, bitter oak, and just hints of sugar sweetness.
Complexity – 75 out of 100 Points
It’s not complex by a long shot. Complexity is Mellow Corns Achilles’ heel. But I’m also OK with what I’m getting for the price. It’s simple and good-ish. It’s aged in used Heaven Hill barrels which creates the mellow feel. The mash bill is 80% corn, 12% malted barley, and 8% rye.
Value – 90 out of 100 Points
Is Mellow Corn good? I enjoy this more than most it seems. The value of Mellow Corn is great. It’s cheap at $12. It’s easy to drink with some rough edges no doubt. It’s the only extra-aged corn whiskey that’s also bottled in bond according to Heaven Hill. The color is apple cider. It’s got great legs. I don’t mind this neat, but it’s a solid mixer.
